
Happy upcoming fourth of July! My holiday will be quite a bit less enjoyable than most of yours. My evening will be at work, full of people who have stupidly and inevitably burnt themselves on fireworks. Some people act on ridiculous drunken ideas.
June was a busy month indeed. I suspect July will be worse. My time isn’t wholly consumed by some certification classes and work. I need and want to go visit my best friend from nursing school. She recently had a bouncing baby boy added to her family. Look at this adorable present!

I think these are so adorable that I almost, almost want a peanut of my own. I’ll keep waiting a while longer and buy adorable things for my friends’ babies. I love my cat. He’s my stand-in child.
Hopefully, I get to go see her and the new one after this weekend. What do you take a new mother for dinner? Oh, and, stay tuned! I’m making chocolate pie tonight. Mmmm…
Lamb Gyro Meatballs
Ingredients:
- 1/2 pound ground lamb
- 1 clove garlic
- 1 tablespoon red wine vinegar
- 3/4 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon vegetable/olive oil
- Onion, Tomato, and Cucumber as topping
- Tzatziki sauce
Directions:
Mix together lamb, ground garlic, vinegar, oregano, onion powder, salt, and pepper. Roll together into approximately 1 inch diameter meatballs. Heat 1 tablespoon oil in a skillet, add meatballs to the pan. Simply cook through and remove from heat. Dice onion, tomato, and cucumber. Combine the meatballs and vegetables to be eaten as a salad or in a pita. Top with tzatziki sauce. I buy a small tub at a local grocery store; however, I’m sure home-made tzatziki would taste even better.
